Saturday is going to be a lovely morning to be out absorbing some vitamin D from the sunshine and getting dirt under your fingernails! We’ll be working from 9 til around noon. This week, I believe we have cabbage, kale, lettuce and perhaps broccoli and bok choy to harvest. We’ll continue with bed building (it will be time to plant potatoes before we know it!), digging strawberry runners and general weeding.
The kale is so delicious; did you know that a cup of chopped raw kale contains 134% of the RDA for Vitamin C? I didn’t until just now. And way more than that for vitamins A and K? It’s also a great source of iron and calcium. Personally, I like it cooked better than raw, and you do lose a little of the nutritional value, but it’s still a superfood. Not fond of greens? I challenge you to try some kale chips. They’re ridiculously expensive to buy in the store, but so easy to make. Using kale from the garden means your only expense is a little oil to coat the leaves. The trick is to tear the kale into small enough pieces so that they get crispy all over. A yummy treat and a great way to sneak vegetables in as a snack.
We planted some peas, carrots and radishes last Saturday and will need to water those in this weekend. If you can bring some water with you for watering(even if it’s just a gallon jug), that would be really helpful. Hauling water from the pond makes me exceptionally grateful for the pump and for our infrastructure team that maintains the irrigation system!
